
Leek and stilton tart
Mix recipes
Leek 400g (clean and wash, sliced finely)
100g butter
Salt and pepper
250g of stilton cheese (grated)
2 whole eggs
250g of double cream
1. Place in a heated pan the butter and the leeks with salt and pepper
2. when the leeks start to be cooked a little (3-5mn) put in the cream and stilton and boil it for 2mn, keep on stirring at all time with a wooden spatula.
3. leave the mix to cool down a little (so you can put your finger in it) then mix in the eggs with a whisk
Pastry recipes
500g plain flour
250g of soft butter
1 pinch of salt
1dl of water
Mix flour & salt with butter (better in a robot mixer) then add water.
Line the past into tart mould then bake in oven at 175c until that the past is cooked
Add inside the tart the leek & stilton mix then bake at 175c until the mix is set and have a nice color.
